2 pounds chicken breasts
1 cup apple cider
1 medium onion, sliced
2 tablespoons olive oil
2 tablespoons Dijon mustard
1 tablespoon fresh thyme or 1 teaspoon dried thyme
Salt and pepper to taste
Instructions
Begin by seasoning the chicken breasts with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and brown them for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced onions and sauté them for about 3-4 minutes until they become soft and translucent.
Stir in the Dijon mustard and apple cider, scraping any bits from the bottom of the pan to incorporate all the flavors. Bring the mixture to a gentle boil.
Add the chicken back to the skillet, ensuring it’s coated with the sauce. Sprinkle thyme over the top.
Cover the skillet and reduce the heat to low. Let it simmer for about 20-25 minutes, until the chicken is cooked through and tender.
