  • Salt and pepper to taste

  • Instructions

  • Begin by seasoning the chicken breasts with salt and pepper.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and brown them for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the sliced onions and sauté them for about 3-4 minutes until they become soft and translucent.
  • Stir in the Dijon mustard and apple cider, scraping any bits from the bottom of the pan to incorporate all the flavors. Bring the mixture to a gentle boil.
  • Add the chicken back to the skillet, ensuring it’s coated with the sauce. Sprinkle thyme over the top.
  • Cover the skillet and reduce the heat to low. Let it simmer for about 20-25 minutes, until the chicken is cooked through and tender.
