1 can of chickpeas (about 15 oz)
1 small onion, finely chopped
1 small carrot, grated
1 bell pepper (any color), finely diced
2 cloves of garlic, minced
1 teaspoon ground cumin
½ teaspoon paprika
Salt and pepper to taste
2–3 tablespoons of flour (or chickpea flour for a gluten-free option)
Oil for frying
Optional: Fresh herbs (like parsley or cilantro)
Optional: Spices (like coriander or curry powder)
Optional: Other veggies (like zucchini or sweet potato)
Instructions
Drain and rinse the chickpeas thoroughly. Mash them, leaving some chunks for texture.
Chop the veggies: dice the onion and bell pepper, and grate the carrot.
In a large bowl, combine the mashed chickpeas, chopped veggies, garlic, cumin, paprika, salt, and pepper. Mix well.
Gradually add flour (or chickpea flour) to the mixture until it holds its shape.
In a large skillet, heat oil over medium heat. Test if it's ready by dropping a small bit of the mixture in; it should sizzle.
Scoop about 2 tablespoons of the mixture, form into a patty, and gently place it in the hot oil. Fry until golden brown on each side, about 4-5 minutes.
Transfer the fritters onto a plate lined with paper towels to absorb excess oil.
