Instructions
Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or butter and set it aside.
Blend the spinach and bananas together. In a blender or food processor, combine the fresh spinach and ripe bananas until smooth.
In a large bowl, whisk together the melted butter, granulated sugar, and eggs until well combined. Stir in the vanilla extract and blended spinach-banana mixture.
