½ cup (115g) unsalted butter
1 cup (170g) semi-sweet chocolate chips
2 large eggs
2 large egg yolks
½ cup (100g) granulated sugar
⅓ cup (40g) all-purpose flour
½ teaspoon vanilla extract
Pinch of salt
Optional: 1 teaspoon espresso powder
Optional: a pinch of chili powder
Optional: zest of one orange
Instructions
Preheat your oven to 450°F (232°C).
Butter four 6-ounce ramekins generously and dust them lightly with cocoa powder or flour.
In a medium saucepan over low heat, melt the butter and chocolate together until smooth, then set aside to cool slightly.
In a large mixing bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened (about 2-3 minutes).
Slowly whisk in the slightly cooled chocolate mixture until well combined.
Sift in the flour, vanilla, and salt; fold gently until just combined.
Divide the batter evenly into the prepared ramekins, filling each about ¾ full.
Place the ramekins on a baking sheet and bake for about 12-14 minutes, until the edges are set and the center still looks soft.
Remove from the oven and let cool for about 1-2 minutes. Run a knife around the edges to loosen.
Carefully invert each ramekin onto a dessert plate and serve immediately, optionally dusting with powdered sugar and adding ice cream or fresh berries.
