  • ½ teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 teaspoon espresso powder
  • Optional: a pinch of chili powder
  • Optional: zest of one orange

  • Instructions

  • Preheat your oven to 450°F (232°C).
  • Butter four 6-ounce ramekins generously and dust them lightly with cocoa powder or flour.
  • In a medium saucepan over low heat, melt the butter and chocolate together until smooth, then set aside to cool slightly.
  • In a large mixing bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened (about 2-3 minutes).
  • Slowly whisk in the slightly cooled chocolate mixture until well combined.
  • Sift in the flour, vanilla, and salt; fold gently until just combined.
  • Divide the batter evenly into the prepared ramekins, filling each about ¾ full.
  • Place the ramekins on a baking sheet and bake for about 12-14 minutes, until the edges are set and the center still looks soft.
  • Remove from the oven and let cool for about 1-2 minutes. Run a knife around the edges to loosen.
  • Carefully invert each ramekin onto a dessert plate and serve immediately, optionally dusting with powdered sugar and adding ice cream or fresh berries.
