  • 4 medium sweet potatoes, peeled and cut into chunks
  • ½ cup unsweetened cocoa powder
  • 1 cup brown sugar
  • ½ cup milk (or non-dairy milk)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 cup chopped pecans
  • ¼ cup melted butter (or coconut oil for a dairy-free version)

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large pot, add sweet potato chunks and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly before mashing.
  • In a large mixing bowl, mash sweet potatoes until smooth.
  • Add cocoa powder, brown sugar, milk, eggs, vanilla extract, and cinnamon to the mashed potatoes and mix well.
  • In a separate bowl, combine chopped pecans and melted butter.
