4 medium sweet potatoes, peeled and cut into chunks
½ cup unsweetened cocoa powder
1 cup brown sugar
½ cup milk (or non-dairy milk)
2 large eggs
1 teaspoon vanilla extract
½ teaspoon cinnamon
1 cup chopped pecans
¼ cup melted butter (or coconut oil for a dairy-free version)
Instructions
Preheat your oven to 350°F (175°C).
In a large pot, add sweet potato chunks and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly before mashing.
In a large mixing bowl, mash sweet potatoes until smooth.
Add cocoa powder, brown sugar, milk, eggs, vanilla extract, and cinnamon to the mashed potatoes and mix well.
In a separate bowl, combine chopped pecans and melted butter.
Spread the sweet potato mixture into a greased 9×13 inch baking dish and sprinkle pecan mixture on top.
Bake for 25-30 minutes, until topping is golden brown.
