1 ½ cups of all-purpose flour
½ cup of unsalted butter, cold and cubed
⅓ cup of powdered sugar
1 large egg yolk
½ cup of heavy cream
8 ounces of dark chocolate, chopped
1 cup of fresh raspberries
1 tablespoon of espresso powder (optional)
2 tablespoons of raspberry jam (optional)
Fresh mint leaves (for garnish)
Additional raspberries (for garnish)
Instructions
Preheat your oven to 350°F (175°C). In a bowl, mix together the flour and powdered sugar. Add the cold, cubed butter. Use your fingers to rub the butter into the flour until it resembles coarse crumbs.
Add the egg yolk and mix just until combined. Press the dough into a tart pan and prick the base with a fork. Bake for about 15-20 minutes until golden.
While the crust cools, heat the heavy cream in a saucepan until just about to boil. Remove from heat, add the chopped chocolate, and stir until smooth.
Pour the chocolate filling into the cooled tart shell and arrange the fresh raspberries on top.
Chill the tart in the fridge for about 2 hours to set before serving.
