  • ⅓ cup of powdered sugar
  • 1 large egg yolk
  • ½ cup of heavy cream
  • 8 ounces of dark chocolate, chopped
  • 1 cup of fresh raspberries
  • 1 tablespoon of espresso powder (optional)
  • 2 tablespoons of raspberry jam (optional)
  • Fresh mint leaves (for garnish)
  • Additional raspberries (for garnish)

  • Instructions

  • Preheat your oven to 350°F (175°C). In a bowl, mix together the flour and powdered sugar. Add the cold, cubed butter. Use your fingers to rub the butter into the flour until it resembles coarse crumbs.
  • Add the egg yolk and mix just until combined. Press the dough into a tart pan and prick the base with a fork. Bake for about 15-20 minutes until golden.
  • While the crust cools, heat the heavy cream in a saucepan until just about to boil. Remove from heat, add the chopped chocolate, and stir until smooth.
  • Pour the chocolate filling into the cooled tart shell and arrange the fresh raspberries on top.
  • Chill the tart in the fridge for about 2 hours to set before serving.
