  • 1 ½ cups chocolate cookie crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup unsweetened cocoa powder
  • 1 cup fresh strawberries, pureed
  • 2 tablespoons granulated sugar

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine chocolate cookie crumbs, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan.
  • Bake the crust in the preheated oven for 8-10 minutes, then remove it and let it cool.
  • In a large bowl, beat the softened cream cheese and sugar until smooth. Add the vanilla extract, followed by the eggs one at a time.
  • Blend in the sour cream and cocoa powder until smooth.
  • In another bowl, mix the pureed strawberries with sugar to create your swirl.
  • Pour half of the cheesecake batter into the crust, add a few spoonfuls of strawberry puree, and swirl gently. Repeat with remaining batter and puree.
  • Bake for 55-60 minutes, until the center is set but still slightly jiggly. Let it cool in the oven for an hour.
  • Chill in the refrigerator for at least 4 hours, preferably overnight.
