2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup grated zucchini
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
8 oz cream cheese
1/4 cup powdered sugar
Optional: 1/2 cup chocolate chips, 1/4 teaspoon cayenne pepper, nuts or dried fruit
Instructions
Preheat your oven: Set it to 350°F (175°C) and grease a 9×5-inch loaf pan.
Mix the dry ingredients: In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, salt, and cinnamon. Whisk them together to ensure even distribution.
Prepare the wet mixture: In another bowl, mix the grated zucchini, vegetable oil, eggs, and vanilla extract. Stir until well combined.
Combine mixtures: Pour the wet ingredients into the dry mixture. Stir gently until just combined. Do not overmix.
Prepare the cream cheese filling: In a separate bowl, beat the cream cheese and powdered sugar until smooth. Set aside.
Fill the pan: Pour half of the chocolate batter into the prepared loaf pan. Spread the cream cheese filling evenly over it, and then top with the remaining chocolate batter.
