24 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1 teaspoon ground cinnamon
½ teaspoon nutmeg
1 cup holiday-themed sprinkles or crushed candy canes

Instructions
Preheat the oven to 325°F (160°C).
Prepare the crust: In a bowl, mix the cookie crumbs with melted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan, making sure it’s firm and even. Bake for about 10 minutes and then let it cool.
Create the filling: In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy. Add eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract, cinnamon, and nutmeg until well blended.
Pour the filling: Pour the cheesecake mixture over the cooled crust in the springform pan, smoothing the top with a spatula.
Bake the cheesecake: Place in the preheated oven and bake for about 50-60 minutes, or until the center is set but slightly jiggly.
Cool down: Once baked, turn off the oven and crack the door open, letting your cheesecake cool in the oven for 1 hour. This helps prevent cracking.
Refrigerate: After it cools, transfer the cheesecake to the fridge to chill for at least 4 hours or overnight for best results.
