  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, beat the softened butter and sugar until light and fluffy.
  • Mix in your egg, vanilla, and peppermint extract until everything is combined.
  • Gradually add your dry ingredients to the wet ingredients, mixing just until everything is combined.
  • Cover the bowl with plastic wrap and chill in the refrigerator for at least 30 minutes.
  • Scoop out tablespoon-sized balls of dough onto a cookie sheet lined with parchment paper, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges turn slightly golden.
