1 ½ pounds flank steak
1/4 cup fresh lime juice
1/4 cup olive oil
1/2 cup fresh cilantro, chopped
3 cloves garlic, minced
1 tsp cumin
Salt and pepper, to taste
Cooked rice or quinoa
Fresh veggies (bell peppers, corn, avocado)
Optional: spicy jalapeños, black beans, pico de gallo
Special garnishes: extra lime wedges, chopped cilantro
Instructions
In a bowl, mix together lime juice, olive oil, cilantro, minced garlic, cumin, salt, and pepper. Place the flank steak in a resealable bag and pour the marinade over it. Seal and let it marinate for at least 30 minutes or overnight.
Preheat the grill to medium-high heat. Remove the steak from the marinade and discard the leftover liquid. Grill for about 6-8 minutes per side.
Let the steak rest for 10 minutes on a cutting board.
Cook rice or quinoa according to package instructions.
Slice the steak against the grain and assemble bowls with rice or quinoa, sliced steak, and fresh veggies.
