1 teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 tablespoon ground cinnamon
¾ cup brown sugar
1 cup powdered sugar (for the glaze)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, whisk together your flour, baking soda, cinnamon, and salt.
In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the egg and pure vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
In a small bowl, combine the brown sugar and remaining ground cinnamon.
Take a tablespoon of cookie dough, flatten it slightly, sprinkle a bit of the cinnamon filling in the center, then fold and shape into a ball.
Place the rounded cookies on a lined baking sheet.
Bake for 10-12 minutes, or until the edges are golden brown but the center still looks slightly underbaked.
Let your cookies cool on the baking sheet for a few minutes before transferring to a wire rack. Prepare the glaze by creaming together powdered sugar and a splash of milk, then drizzle it over the cookies.
