1 cup pumpkin puree
1 cup brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13 baking pan or line it with parchment paper for easy removal.
In a medium-sized bowl, melt the unsalted butter in the microwave or on the stovetop.
In a large mixing bowl, combine the melted butter, pumpkin puree, brown sugar, granulated sugar, eggs, and vanilla extract. Mix until smooth and well combined.
In another bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Do not overmix.
If you’re adding chocolate chips or nuts, fold them in at this stage.
Spread the batter evenly into the prepared baking pan.
In a small bowl, mix 2 tablespoons of granulated sugar with 1 teaspoon of cinnamon. Sprinkle this mixture over the top of the batter.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the blondies to cool in the pan for at least 10 minutes before transferring to a wire rack. Cut into squares and enjoy!
