  • 1 teaspoon baking soda

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13 baking pan or line it with parchment paper for easy removal.
  • In a medium-sized bowl, melt the unsalted butter in the microwave or on the stovetop.
  • In a large mixing bowl, combine the melted butter, pumpkin puree, brown sugar, granulated sugar, eggs, and vanilla extract. Mix until smooth and well combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Do not overmix.
  • If you’re adding chocolate chips or nuts, fold them in at this stage.
  • Spread the batter evenly into the prepared baking pan.
  • In a small bowl, mix 2 tablespoons of granulated sugar with 1 teaspoon of cinnamon. Sprinkle this mixture over the top of the batter.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the blondies to cool in the pan for at least 10 minutes before transferring to a wire rack. Cut into squares and enjoy!
