  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease a 9×5-inch loaf pan with butter or non-stick spray.
  • In a medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • In a large bowl, combine the mashed bananas and melted butter until well mixed. Add sugar, eggs, and vanilla, stirring until smooth.
  • Gradually mix the dry ingredients into the wet mixture, being careful not to overmix.
  • In a small bowl, mix the brown sugar and cinnamon together for the swirl mixture.
  • Pour half of the batter into the prepared pan, add half of the cinnamon swirl mixture. Repeat layers, then swirl gently.
  • Bake for 60-65 minutes or until a toothpick inserted comes out clean. Cover loosely with foil if browning too quickly.
