  • Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a large bowl, beat the eggs and sugar together until combined. Then, add the oil and vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the grated carrots (and any optional add-ins).
  • Pour the batter evenly into the prepared cake pans and bake for 25 to 30 minutes.
  • Once done, let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  • To make the cream cheese frosting, beat together cream cheese, softened butter, powdered sugar, and vanilla extract until fluffy.
  • Once cooled, assemble the cake: place one layer on a serving plate, spread frosting on top, then add the second layer and frost the top and sides.
