2 boneless, skinless chicken breasts
1 cup shredded coconut
1/2 cup all-purpose flour
2 large eggs
1 cup apricot preserves
1 tablespoon soy sauce

Instructions
Start by preparing the chicken. If the breasts are thick, consider slicing them in half horizontally to create thinner fillets for even cooking.
Set up a breading station. In one bowl, place the all-purpose flour seasoned with salt and pepper. In a second bowl, whisk the eggs until well combined. In a third bowl, place the shredded coconut.
Dredge each chicken breast first in the flour, coating it evenly. Shake off any excess flour.
