  • Start by preparing the chicken. If the breasts are thick, consider slicing them in half horizontally to create thinner fillets for even cooking.
  • Set up a breading station. In one bowl, place the all-purpose flour seasoned with salt and pepper. In a second bowl, whisk the eggs until well combined. In a third bowl, place the shredded coconut.
  • Dredge each chicken breast first in the flour, coating it evenly. Shake off any excess flour.
  • Next, dip the floured chicken into the beaten eggs, ensuring it’s fully coated before moving it to the coconut bowl.
