Ingredients
Beef Roast (about 3-4 pounds)
Cranberry Sauce (1 cup)
Balsamic Vinegar (1/2 cup)
Garlic cloves (4-5 cloves, minced)
Thyme (fresh or dried, 1 tablespoon)
Olive Oil (2 tablespoons)
Salt and Black Pepper (to taste)
Instructions
Preheat the Oven: Set your oven to 325°F (163°C) to prepare for roasting.
Prepare the Marinade: In a mixing bowl, combine the cranberry sauce, balsamic vinegar, minced garlic, thyme, salt, and pepper to create a flavorful marinade.
Marinate the Beef: Place your beef roast in a large resealable bag or a dish. Pour the marinade over it, making sure it’s well-coated. Let it marinate in the fridge for at least 2 hours, preferably overnight.
Seal and Sear: Heat olive oil in a large skillet over medium-high heat. Remove the roast from the marinade, reserving the marinade for later. Sear the beef for about 4-5 minutes on each side until browned.
Roast in the Oven: Transfer the beef to a roasting pan and pour the reserved marinade over the top. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until it reaches your desired level of doneness (135°F for medium-rare).
Rest the Meat: Once cooked, take the roast out of the oven and let it rest for at least 15-20 minutes. This allows the juices to redistribute.
Slice and Serve: Slice the roast thinly against the grain and serve with the pan juices or a drizzle of additional cranberry sauce. Enjoy!
