1 cup unsalted butter
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups dried cranberries
1 cup white chocolate chips
Optional additions: 1/2 cup chopped pecans or walnuts; 1/2 teaspoon of cinnamon or nutmeg
For garnishes: fresh cranberries; shaved white chocolate
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
Fold in the dried cranberries and white chocolate chips, ensuring they are evenly distributed throughout the batter.
Spread the mixture evenly in the prepared baking pan.
