1 cup Sugar
2 cups grated Carrots
1 cup fresh or frozen Cranberries
3 large Eggs
1 cup Vegetable oil
2 tsp Baking powder
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Salt
Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
In another bowl, beat the eggs and sugar until light and fluffy. Gradually add in the vegetable oil and mix until combined.
Slowly incorporate the dry mixture into the wet mixture, stirring until just combined. Be careful not to overmix.
Gently fold in the grated carrots and cranberries, ensuring they are evenly distributed throughout the batter.
Divide the batter evenly between the prepared pans and smooth the tops.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
For a creamy finish, whip together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of cream cheese frosting on top, then add the second cake layer. Frost the top and sides of the cake evenly.
Decorate with candied cranberries and mint leaves as desired. Slice and serve!
