  • 2 cups grated Carrots

  • 3 large Eggs

  • 2 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt

  • Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, beat the eggs and sugar until light and fluffy. Gradually add in the vegetable oil and mix until combined.
  • Slowly incorporate the dry mixture into the wet mixture, stirring until just combined. Be careful not to overmix.
  • Gently fold in the grated carrots and cranberries, ensuring they are evenly distributed throughout the batter.
  • Divide the batter evenly between the prepared pans and smooth the tops.
  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow them to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • For a creamy finish, whip together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  • Once the cakes are completely cool, place one layer on a serving platter. Spread a layer of cream cheese frosting on top, then add the second cake layer. Frost the top and sides of the cake evenly.
  • Decorate with candied cranberries and mint leaves as desired. Slice and serve!
