- 2 pounds Chicken thighs
- 1 cup Fresh cranberries
- 1/2 cup Orange juice
- 1/4 cup Honey
- 4 cloves Garlic, minced
- 1 teaspoon Thyme, dried
- 2 tablespoons Olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken thighs dry and season them with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken thighs skin-side down and brown for 5-7 minutes. Flip and cook for another 5 minutes. Remove and set aside.
- In the same skillet, add minced garlic and cook for 30 seconds. Add cranberries, orange juice, honey, and thyme. Simmer for 3-5 minutes.
- Return the chicken to the skillet and coat with the sauce.
- Bake for 25-30 minutes or until chicken reaches 165°F (74°C).
- Let the chicken rest for 5 minutes, then garnish and serve.
