1 ½ cups all-purpose flour
½ cup unsalted butter
⅓ cup granulated sugar
⅓ cup brown sugar
2 cups fresh cranberries
1 teaspoon orange zest
1 tablespoon cornstarch
1 large egg
Pinch of salt
Instructions
In a mixing bowl, combine the flour, granulated sugar, and salt. Add the unsalted butter, and using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
Gradually add cold water, one tablespoon at a time, until the dough holds together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
In a medium saucepan over medium heat, combine fresh cranberries, brown sugar, cornstarch, and orange zest. Stir consistently until the mixture begins to bubble. Let it simmer for about 5 minutes, or until the cranberries soften and the mixture thickens.
While the cranberries cool, preheat your oven to 350°F (175°C).
On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles and place them into a greased muffin pan, pressing the dough into the bottom and sides.
Spoon the cranberry filling into each crust, filling them about ¾ full.
Place the tartlets in the preheated oven and bake for 20-25 minutes, or until the crusts are golden brown.
Once baked, remove the tartlets from the oven and let them cool in the pan for 10 minutes before transferring them to a wire rack. Dust with powdered sugar and add any desired garnishes.
