Instructions
Prep the chicken: If your chicken breasts are thick, consider slicing them in half to even out the cooking time.
Season and sear: In a large skillet, heat the olive oil over medium-high heat. Season both sides of the chicken breasts with salt and pepper, then add them to the skillet. Sear for about 5-7 minutes on each side or until golden brown.

Pour in the coconut milk: Add the coconut milk, scraping up any browned bits stuck to the bottom of the skillet.
