1 pound ground beef or turkey
1 medium onion, diced
3 cloves garlic, minced
28 oz can crushed tomatoes
4 cups chicken or vegetable broth
8 oz lasagna noodles, broken into pieces
4 oz cream cheese
2 teaspoons Italian seasoning
Salt and pepper to taste
Fresh parsley or basil for garnish
Optional: red pepper flakes, spinach or kale, mushrooms, ricotta cheese

Instructions
Sauté the Aromatics: In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and continue to cook for another minute until fragrant.
Brown the Meat: Add the ground beef or turkey, breaking it apart with a wooden spoon. Cook until browned and no longer pink. Drain excess fat if necessary.
Add the Tomatoes and Broth: Pour in the crushed tomatoes and chicken broth, stirring well to combine. Bring this mixture to a gentle boil.
Add Noodles: Once boiling, add the broken lasagna noodles. Stir to incorporate, then reduce heat to a simmer. Cover and cook for 10 minutes, stirring occasionally until the noodles are tender.
