4 Salmon fillets (about 6 oz. each)
Salt and pepper to taste
2 tablespoons of Butter
4 cloves of Garlic, minced
1 cup of Chicken broth
1 cup of Heavy cream
Juice of 1–2 Lemons
2 tablespoons of Capers
2 tablespoons of Parsley, chopped
Instructions
Pat the salmon fillets dry with a paper towel and season with salt and pepper.
In a large skillet, melt the butter over medium heat.
Place the salmon fillets in the pan skin-side down. Sear for 4-5 minutes until crispy, then flip and cook for another 3-4 minutes. Transfer the salmon to a plate and cover to keep warm.
In the same pan, add the minced garlic and sauté for about a minute. Pour in the chicken broth and bring to a simmer. Let it reduce for 3-4 minutes.
Stir in the heavy cream and lemon juice. Let it simmer for 2-3 minutes until thickened.
Add the capers to the sauce.
Nestle the salmon back into the sauce and spoon the sauce over the fish.
Garnish with chopped parsley and serve immediately.
