1 lb of medium shrimp, peeled and deveined
2 tbsp of olive oil
4 cloves of garlic, minced
1 cup of heavy cream
1 lemon, juice and zest
½ cup of Parmesan cheese, grated
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the orzo: Start by boiling a large pot of lightly salted water. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Don’t forget to stir occasionally! Once done, drain it and set aside, but don't rinse—keep that starch!
Sauté the shrimp: In a large skillet, heat the olive oil over medium heat. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes on each side until they turn pink and opaque. Once cooked, transfer them to a plate and set aside.
Cook the garlic: In the same pan, add minced garlic. Sauté it for about 30 seconds until fragrant.
