1 lb Chicken Breast
2 cups Mushrooms (cremini or button)
1 cup Wild Rice
1 medium Onion
2 cloves Garlic
4 cups Chicken Broth
1 cup Heavy Cream
2 tbsp Olive Oil
Salt and Pepper
Fresh Parsley
Instructions
Rinse the wild rice under cold water until the water runs clear. Set aside.
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Stir in the garlic and cook for another 30 seconds until fragrant.
Add the mushrooms and cook for 5-7 minutes, allowing them to release their moisture and brown slightly.
Season the chicken breasts with salt and pepper. Push the vegetables to the side of the pot and add the chicken. Sear for about 4 minutes on each side until golden brown.
Pour in the chicken broth and add the wild rice. Bring the mixture to a boil.
Reduce the heat to a simmer and cover the pot. Cook for about 30-40 minutes, or until the wild rice is tender and has burst open.
Remove the chicken, shredding it with two forks, and return it to the pot along with the heavy cream. Stir to combine and heat through for an additional 5 minutes.
Season again with salt and pepper to taste and garnish with fresh parsley before serving.
