Ingredients

  • 1 lb Chicken Breast
  • 2 cups Mushrooms (cremini or button)
  • 1 cup Wild Rice
  • 1 medium Onion
  • 2 cloves Garlic
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 2 tbsp Olive Oil
  • Salt and Pepper
  • Fresh Parsley

  • Instructions

  • Rinse the wild rice under cold water until the water runs clear. Set aside.
  • In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  • Stir in the garlic and cook for another 30 seconds until fragrant.
  • Add the mushrooms and cook for 5-7 minutes, allowing them to release their moisture and brown slightly.
  • Season the chicken breasts with salt and pepper. Push the vegetables to the side of the pot and add the chicken. Sear for about 4 minutes on each side until golden brown.
  • Pour in the chicken broth and add the wild rice. Bring the mixture to a boil.
  • Reduce the heat to a simmer and cover the pot. Cook for about 30-40 minutes, or until the wild rice is tender and has burst open.
  • Remove the chicken, shredding it with two forks, and return it to the pot along with the heavy cream. Stir to combine and heat through for an additional 5 minutes.
  • Season again with salt and pepper to taste and garnish with fresh parsley before serving.
