  • 250 grams of mushrooms, sliced
  • 1 cup of heavy cream
  • ½ cup of parmesan cheese, grated
  • ¼ cup of fresh parsley, chopped
  • Salt and black pepper to taste

  • Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add your spaghetti (or pasta of choice) and cook according to package instructions until al dente. Make sure to reserve about a cup of pasta water before draining.
  • Sauté the Aromatics: In a large pan over medium heat, drizzle the olive oil. When it’s warm and shimmering, toss in the minced garlic and sauté for just a minute until fragrant. Avoid burning the garlic.
  • Add the Mushrooms: Add the sliced mushrooms to the pan, sprinkle a little salt, and sauté for about 5-7 minutes, until beautifully browned and tender.
  • Create the Creamy Sauce: Pour in the heavy cream and stir to combine. Let it simmer gently for 2-3 minutes until thickened slightly. If too thick, add reserved pasta water.
  • Mix It All Together: Add the drained pasta into the sauce and toss to combine. If too dry, splash in some pasta water as needed.
  • Finishing Touch: Remove from heat and stir in the grated parmesan and chopped parsley. Taste and adjust seasoning with salt and pepper, serve immediately.
