  • Instructions

  • Rinse and soak the peas: Rinse the dried black-eyed peas under cold water and soak them overnight. If short on time, soak in boiling water for one hour.
  • Cook the bacon or heat olive oil: In a large pot over medium heat, cook the bacon until crispy or heat olive oil.
  • Add the aromatics: Add diced onion to the pot and cook until translucent, then add minced garlic and cook for one more minute.
  • Add peas and broth: Drain and add the soaked black-eyed peas along with the broth. Stir well.
