Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar (for topping)

  • Instructions

  • Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  • Beat in the eggs one at a time, then mix in the vanilla extract until well combined.
  • In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Using a cookie scoop or a tablespoon, scoop out portions of dough and roll into balls. Place them on the prepared baking sheets, about 2 inches apart.
  • Bake in the preheated oven for about 10 minutes, or until the edges are set but the centers are still soft.
  • Once baked, remove cookies from the oven and let cool for a few minutes. Then, sprinkle a teaspoon of granulated sugar on top of each cookie.
  • Using a kitchen torch, carefully caramelize the sugar on top of each cookie until golden brown. If you don’t have a torch, you can place the cookies under the broiler for 1-2 minutes, keeping a close eye on them to prevent burning.
  • Allow cookies to cool completely before serving.
