  • 1 cup of shredded carrots
  • 1 cup of thinly sliced bell peppers
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • Spring roll wrappers
  • Vegetable oil for frying

  • Instructions

  • In a large skillet, heat a splash of oil over medium heat. Gently sauté the minced garlic and grated ginger until fragrant—about 1 minute.
  • Add the ground chicken. Break it up with a spatula, and cook until browned, about 5–7 minutes. Season with salt and pepper to taste.
  • Once the chicken is cooked through, add the shredded carrots and sliced bell peppers. Stir in the soy sauce and rice vinegar and let everything simmer for about 3–4 minutes.
  • Transfer the filling into a bowl and allow it to cool slightly.
  • Take a spring roll wrapper and lay it flat. Spoon a generous amount of filling onto the lower third, fold the sides inward, and roll tightly from the bottom to the top, sealing the edges with a little water.
  • In a deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat.
  • Carefully place a few spring rolls into the oil, frying until golden brown, about 3–4 minutes on each side. Transfer to a paper towel-lined plate when done.
  • Arrange the crispy chicken spring rolls on a platter and garnish as desired.
