1 pound of ground chicken
1 cup of shredded carrots
1 cup of thinly sliced bell peppers
2 cloves of garlic, minced
1 tablespoon of fresh ginger, grated
2 tablespoons of soy sauce
1 tablespoon of rice vinegar
Spring roll wrappers
Vegetable oil for frying
Instructions
In a large skillet, heat a splash of oil over medium heat. Gently sauté the minced garlic and grated ginger until fragrant—about 1 minute.
Add the ground chicken. Break it up with a spatula, and cook until browned, about 5–7 minutes. Season with salt and pepper to taste.
Once the chicken is cooked through, add the shredded carrots and sliced bell peppers. Stir in the soy sauce and rice vinegar and let everything simmer for about 3–4 minutes.
Transfer the filling into a bowl and allow it to cool slightly.
Take a spring roll wrapper and lay it flat. Spoon a generous amount of filling onto the lower third, fold the sides inward, and roll tightly from the bottom to the top, sealing the edges with a little water.
In a deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat.
Carefully place a few spring rolls into the oil, frying until golden brown, about 3–4 minutes on each side. Transfer to a paper towel-lined plate when done.
Arrange the crispy chicken spring rolls on a platter and garnish as desired.
