2 cups of all-purpose flour
3/4 cup of boiling water
1 teaspoon of salt
1 cup of finely chopped scallions (green onions)
Vegetable oil for frying
Optional: sesame oil, chili flakes, soy sauce, fresh cilantro
Instructions
In a large bowl, combine the flour and salt. Slowly pour in the boiling water, stirring with a chopstick or a fork until it forms a shaggy dough. Let it sit covered with a clean towel for around 30 minutes.
Transfer the dough to a lightly floured surface and knead for about 5-8 minutes until it becomes smooth and elastic.
Divide the dough into four equal portions. Roll each piece into a ball and flatten it. Roll each piece into a thin round, about 1/8 inch thick.
Brush the surface of the dough with a little oil and sprinkle with a generous amount of chopped scallions. Roll the dough tightly like a jelly roll.
Coil the rolled dough into a spiral shape and flatten it gently before rolling it again to about 1/4 inch thick.
In a large skillet over medium heat, pour enough vegetable oil to coat the bottom. Once hot, gently place your pancake into the skillet, frying for about 3-4 minutes on each side until golden brown.
Transfer to a paper towel-lined plate to drain excess oil and serve hot with your favorite dipping sauce.
