2 cups marinara sauce
2 cups shredded mozzarella cheese
½ cup grated Parmesan cheese

Instructions
Slice your eggplant into ½-inch rounds and sprinkle them generously with salt. Let them sit in a colander for about 30 minutes.
Set out three shallow bowls: one with flour, another with beaten eggs, and the last with breadcrumbs mixed with Italian seasoning.
Rinse the salted eggplant under cold water and pat dry with paper towels.
Dredge each eggplant slice in flour, dip in the egg, and then coat with breadcrumbs.
In a skillet, heat about ½ inch of oil over medium heat and fry the eggplant slices until golden brown, about 3-4 minutes per side.
Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce in a baking dish. Layer half of the fried eggplant, followed by half of the marinara, mozzarella, and Parmesan. Repeat the layers.
Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes until cheese is bubbly.
Let it rest for about 10 minutes to make slicing easier.
