  • Salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs (preferably panko)
  • 1 teaspoon Italian seasoning
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves (for garnish)
  • Optional: Sliced tomatoes, red pepper flakes, vegan cheese substitute

  • Instructions

  • Slice your eggplant into ½-inch rounds and sprinkle them generously with salt. Let them sit in a colander for about 30 minutes.
  • Set out three shallow bowls: one with flour, another with beaten eggs, and the last with breadcrumbs mixed with Italian seasoning.
  • Rinse the salted eggplant under cold water and pat dry with paper towels.
  • Dredge each eggplant slice in flour, dip in the egg, and then coat with breadcrumbs.
  • In a skillet, heat about ½ inch of oil over medium heat and fry the eggplant slices until golden brown, about 3-4 minutes per side.
  • Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce in a baking dish. Layer half of the fried eggplant, followed by half of the marinara, mozzarella, and Parmesan. Repeat the layers.
  • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes until cheese is bubbly.
  • Let it rest for about 10 minutes to make slicing easier.
