1 lb Ground Beef or Sausage
1 medium Onion, chopped
3 cloves Garlic, minced
2 cups Marinara Sauce
4 cups Beef Broth
2 Bay Leaves
1 tsp Dried Oregano
1 tsp Dried Basil
Red Pepper Flakes, optional, to taste
8 oz Pasta (lasagna noodles cut into strips)
1 cup Ricotta Cheese
2 cups Shredded Mozzarella
Fresh Parsley, for garnish
Instructions
In a skillet over medium heat, brown the ground beef (or sausage) along with the chopped onion and minced garlic until the meat is cooked through. Drain any excess fat.
Transfer the cooked meat mixture to your slow cooker. Pour in the marinara sauce, beef broth, bay leaves, dried oregano, dried basil, and red pepper flakes (if using). Stir well to combine.
Cover the slow cooker and set it on low for 6-8 hours, or on high for 3-4 hours. This slow cooking allows the flavors to meld beautifully.
About 30 minutes before serving, add the lasagna noodle strips to the crockpot and stir gently to combine. Allow them to cook through.
Once the noodles are tender, mix in the ricotta cheese until it’s well combined, creating that creamy texture.
Sprinkle the shredded mozzarella on top of the soup, and let it melt for a few minutes.
Serve hot, garnished with fresh parsley and any additional toppings you desire.
