  • 1 pound Kielbasa, chopped
  • 16 ounces Frozen Pierogi
  • 2 medium Potatoes, diced
  • 1 large Onion, chopped
  • 2 cups Cheddar cheese, shredded
  • 2 cups Chicken broth
  • 1 cup Sour cream
  • 2 cloves Garlic, minced
  • Salt & Pepper to taste

  • Instructions

  • Prepare the Ingredients: Start by chopping the kielbasa into bite-sized pieces. Dice the potatoes and chop the onion. Set these aside.
  • Layer in the Crockpot: Begin by placing the diced potatoes at the bottom of the slow cooker. Then, layer the chopped onion and kielbasa over the potatoes.
  • Add the Frozen Pierogi: Scatter the frozen pierogi evenly over the top of the sausage and onions.
  • Mix in the Cheese: Sprinkle the shredded cheddar cheese on top of the pierogi.
  • Pour the Broth: Carefully pour the chicken broth over the entire mixture, ensuring everything is somewhat submerged.
  • Season: Add in the minced garlic, salt, and pepper to taste. Stir gently to combine, being careful not to disturb the layers too much.
  • Cook: Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours. The dish is ready when the potatoes are tender and the flavors have melded together beautifully.
  • Add Sour Cream: About 30 minutes before serving, stir in the sour cream. Cover and continue cooking on low.
  • Serve: Once done, give the casserole a gentle stir and serve hot, garnished with chopped chives or parsley as desired.
