  • 1 pound Sausage (Italian, smoked, or chicken)
  • 2 Bell Peppers (an assortment of colors)
  • 1 large Onion
  • 1 can (14.5 oz) Canned Diced Tomatoes
  • 1 cup Tomato Sauce
  • 3 cloves Garlic (minced)
  • 1 cup Cheddar Cheese (shredded)
  • Salt, Pepper, Italian herbs (to taste)
  • 2 tablespoons Olive Oil

  • Instructions

  • Start by prepping your ingredients: chop the bell peppers, onion, and garlic. Thinly slice the sausage if it’s not pre-cooked.
  • In a skillet, heat olive oil over medium heat. Sauté the onions and garlic until fragrant and translucent, about 3-4 minutes.
  • Add the bell peppers to the skillet and cook for another 2-3 minutes until they start to soften.
  • In your crockpot, combine the sautéed mixture with the sausage, canned tomatoes, tomato sauce, and seasonings. Stir well.
  • Cover and set your crockpot on low for 6-8 hours or on high for 3-4 hours. Stir occasionally if possible.
  • Add the cheese to the top of the casserole about 30 minutes before serving. Cover again to allow it to melt.
