  • 1 packet taco seasoning
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 can (15 oz) diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 45 corn tortillas (cut into quarters)
  • 1/2 cup chopped bell peppers
  • 1/2 cup diced onions
  • Optional toppings: sour cream, avocado slices, chopped green onions

  • Instructions

  • In a skillet over medium heat, brown the ground meat until fully cooked. Drain any excess fat.
  • Stir in the taco seasoning, black beans, diced tomatoes, corn, chopped bell peppers, and diced onions. Cook for a few more minutes until everything is well mixed.
  • Layer the ingredients in your slow cooker. Start with half the mixture, then add a layer of corn tortilla quarters followed by half the cheese.
  • Add the remaining meat mixture, another layer of corn tortilla quarters, and top with the remaining cheese.
  • Cover and cook on low for 4-6 hours or on high for 2-3 hours. The cheese should be melted and bubbly.
  • Once cooked, garnish as desired and serve hot.
