1 pound ground beef (or turkey)
1 packet taco seasoning
1 can (15 oz) black beans (drained and rinsed)
1 can (15 oz) diced tomatoes
1 cup corn (fresh or frozen)
1 cup shredded cheese (cheddar or Mexican blend)
4–5 corn tortillas (cut into quarters)
1/2 cup chopped bell peppers
1/2 cup diced onions
Optional toppings: sour cream, avocado slices, chopped green onions
Instructions
In a skillet over medium heat, brown the ground meat until fully cooked. Drain any excess fat.
Stir in the taco seasoning, black beans, diced tomatoes, corn, chopped bell peppers, and diced onions. Cook for a few more minutes until everything is well mixed.
Layer the ingredients in your slow cooker. Start with half the mixture, then add a layer of corn tortilla quarters followed by half the cheese.
Add the remaining meat mixture, another layer of corn tortilla quarters, and top with the remaining cheese.
Cover and cook on low for 4-6 hours or on high for 2-3 hours. The cheese should be melted and bubbly.
