1 lb of ground beef1 medium onion, chopped1 bell pepper, chopped (red or green)2 cloves of garlic, minced1 can (14 oz) of diced tomatoes1/2 cup of green olives, chopped1/2 cup of raisins1 teaspoon of cumin1 teaspoon of oreganoSalt and pepper, to taste2 tablespoons of olive oilOptional: Chopped jalapeños, chopped cilantro, chopped carrotSpecial garnishes: Chopped scallions, avocado slices
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until they soften.Stir in the minced garlic and cook for an additional minute.Add the ground beef to the skillet, breaking it apart. Cook until browned, about 7-10 minutes.Pour in the diced tomatoes (with their juices), cumin, oregano, salt, and pepper. Mix and simmer for 5 minutes.Stir in the chopped olives and raisins.
