  • 1 medium onion, chopped
  • 1 bell pepper, chopped (red or green)
  • 2 cloves of garlic, minced
  • 1 can (14 oz) of diced tomatoes
  • 1/2 cup of green olives, chopped
  • 1/2 cup of raisins
  • 1 teaspoon of cumin
  • 1 teaspoon of oregano
  • Salt and pepper, to taste
  • 2 tablespoons of olive oil
  • Optional: Chopped jalapeños, chopped cilantro, chopped carrot
  • Special garnishes: Chopped scallions, avocado slices

  • Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until they soften.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the ground beef to the skillet, breaking it apart. Cook until browned, about 7-10 minutes.
  • Pour in the diced tomatoes (with their juices), cumin, oregano, salt, and pepper. Mix and simmer for 5 minutes.
  • Stir in the chopped olives and raisins. Combine and adjust seasonings if needed.
  • Let everything simmer on low heat for another 10 minutes.
  • Serve the Picadillo over fluffy white rice and garnish with your chosen toppings.
