8 oz cream cheese
1/2 cup sugar
1 teaspoon vanilla extract
2 large eggs
1 cup sour cream
1/3 cup Andes mint baking chips
1 cup graham cracker crumbs
1/4 cup melted butter
Optional Additions: chocolate chips
Special Garnishes: whipped cream, sprig of mint
Instructions
Preheat your oven to 325°F (165°C).
Prepare the crust: In a mixing bowl, combine the graham cracker crumbs and melted butter. Line a muffin tin with cupcake liners and press about a tablespoon of the crust mixture into each liner.
Bake the crust for 8-10 minutes, until slightly golden and fragrant. Let cool.
In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined. Add eggs one at a time, ensuring they are fully incorporated. Fold in sour cream and Andes mint chips.
Spoon the filling onto the crusts, filling them about 3/4 full. Bake for 20-25 minutes until set around the edges with a slight jiggle in the center.
Allow cheesecakes to cool in the pan, then refrigerate for at least 2 hours before serving.
