Ingredients
Scale
2 cups of dandelion petals
4 cups of water
1 lemon (juiced)
1 box (1.75 oz) of pectin
5 cups of sugar
1/2 teaspoon of butter (optional)
Instructions
Prepare the Dandelions: Start by plucking off just the yellow petals from the dandelions and discarding the green parts.
Make the Dandelion Tea: In a large pot, bring the 4 cups of water to a boil. Add your dandelion petals and let it steep for about 30 minutes.
Strain the Mixture: Using a fine mesh strainer or cheesecloth, strain the mixture into a bowl, pressing the petals gently to extract as much liquid as possible.
Mix it Up: Return the strained liquid to the pot and add the lemon juice and pectin. Stir well and place over medium heat until bubbling.
Add Sugar: Gradually stir in the sugar until dissolved, then bring back to a rolling boil for one minute, stirring constantly.
Jar It Up: Pour hot jelly into sterilized jars, leaving a little headspace. Wipe the rims clean and seal with lids.
Process the Jars: If canning, process jars in a water bath for about 5-10 minutes. If not, allow to cool and refrigerate.
