  • Prepare the potatoes: Start by peeling those russet potatoes. Cut them into quarters and place them into a large pot filled with cold, salted water. Bring it to a boil, and let those potatoes simmer for about 15-20 minutes or until a fork easily pierces through them.
  • Cook the cabbage: With about 10 minutes left on the potatoes, toss in your shredded cabbage into the pot. Let it cook until tender.
  • Drain and mash: Once both the potatoes and cabbage are perfectly cooked, drain them and return them to the pot. Mash with cream and butter until creamy.
  • Season it up: Toss in the finely chopped scallions, and sprinkle with salt and pepper to taste. Mix until well combined.
