1 cup strong brewed coffee
1/2 cup limoncello
4 large eggs, separated
3/4 cup granulated sugar
1 cup mascarpone cheese
1 cup heavy cream
24 ladyfingers
Zest of 1 lemon
1 teaspoon vanilla extract (optional)
Chocolate shavings for garnish (optional)
Extra lemon zest for garnish
Fresh mint leaves for garnish
Instructions
Start by brewing your strong coffee and let it cool slightly—while you're at it, pour yourself a little limoncello for a taste test.
In a mixing bowl, whisk together the egg yolks and granulated sugar until pale and fluffy, about 5 minutes.
Gently fold in the mascarpone cheese and lemon zest until smoothly combined with no lumps.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold this whipped cream into the mascarpone mixture.
In a shallow dish, combine the cooled coffee with the limoncello. Dip each ladyfinger into this mixture for just a second.
Layer half of the soaked ladyfingers at the bottom of your serving dish or individual glasses. Spoon half of the mascarpone mix over the top.
Add another layer of coffee-soaked ladyfingers, followed by the remaining mascarpone mixture. Smooth it down and refrigerate for at least 4 hours.
When ready to serve, dust with a little extra lemon zest and any garnish you fancy.
