  • 2 eggs, beaten

  • ½ cup onions, finely chopped
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon dried herbs (like oregano or basil) – optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté the chopped spinach with the minced garlic and chopped onions over medium heat until the spinach wilts and the onions become translucent, about 3-5 minutes.
  3. In a large mixing bowl, combine the sautéed spinach mixture with the bread crumbs, beaten eggs, shredded cheese, salt, black pepper, red pepper flakes, and herbs. Mix until everything is well combined.
  4. With clean hands, take a spoonful of the mixture and shape it into small balls, roughly the size of a golf ball.
  5. Place the shaped spinach balls on a baking sheet lined with parchment paper, spaced about an inch apart. Bake for about 20-25 minutes or until they are golden brown.
