- 2 eggs, beaten

- ½ cup onions, finely chopped
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- ½ teaspoon dried herbs (like oregano or basil) – optional
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté the chopped spinach with the minced garlic and chopped onions over medium heat until the spinach wilts and the onions become translucent, about 3-5 minutes.
- In a large mixing bowl, combine the sautéed spinach mixture with the bread crumbs, beaten eggs, shredded cheese, salt, black pepper, red pepper flakes, and herbs. Mix until everything is well combined.
- With clean hands, take a spoonful of the mixture and shape it into small balls, roughly the size of a golf ball.
- Place the shaped spinach balls on a baking sheet lined with parchment paper, spaced about an inch apart. Bake for about 20-25 minutes or until they are golden brown.
- Once finished, let them cool for a minute before serving.
