Instructions
Start by hard-boiling the eggs. Place the eggs in a large saucepan and cover them with water, ensuring there’s about an inch of water above the eggs. Bring the water to a rolling boil, then cover the pot and remove it from heat. Let the eggs sit for 9-12 minutes, then transfer to an ice bath for 5 minutes.
After the eggs have cooled, gently tap them on a hard surface to crack the shell, then peel under running water.
Slice each egg in half lengthwise and remove the yolks into a bowl. Mash the yolks with a fork, then mix in mayonnaise, Dijon mustard, salt, and pepper until creamy.
