  • Instructions

  • Begin by boiling the eggs. Place them in a saucepan, cover with cold water, and bring to a rolling boil. Once boiling, cover the pot and remove from heat. Let sit for 12 minutes.
  • After 12 minutes, transfer the eggs to an ice bath (a bowl of ice and water) to cool.
  • Once chilled, gently tap each egg on a hard surface and peel under running water.
  • Slice the eggs in half lengthwise and carefully scoop out the yolks into a mixing bowl.
  • Add mayonnaise, Dijon mustard, white vinegar, smoked paprika, salt, and pepper to the bowl with the yolks. Mix until smooth and creamy.
  • If using sriracha, stir it in and adjust seasoning to taste.
  • Using either a piping bag or a spoon, fill each egg white half with the yolk mixture.
  • Garnish as desired and serve chilled or at room temperature.
