6 large eggs
3 tablespoons mayonnaise
1 teaspoon Dijon mustard
1 teaspoon white vinegar
Salt and pepper to taste
1/2 teaspoon smoked paprika
Optional: 1 tablespoon sriracha
Instructions
Begin by boiling the eggs. Place them in a saucepan, cover with cold water, and bring to a rolling boil. Once boiling, cover the pot and remove from heat. Let sit for 12 minutes.
After 12 minutes, transfer the eggs to an ice bath (a bowl of ice and water) to cool.
Once chilled, gently tap each egg on a hard surface and peel under running water.
Slice the eggs in half lengthwise and carefully scoop out the yolks into a mixing bowl.
Add mayonnaise, Dijon mustard, white vinegar, smoked paprika, salt, and pepper to the bowl with the yolks. Mix until smooth and creamy.
If using sriracha, stir it in and adjust seasoning to taste.
Using either a piping bag or a spoon, fill each egg white half with the yolk mixture.
Garnish as desired and serve chilled or at room temperature.
