Ingredients

  • 1 cup Long-Grain Rice
  • 2 cups Chicken Broth
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt and Pepper to taste
  • 1 cup Tzatziki Sauce

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine the rice, chicken broth, olive oil, garlic powder, paprika, salt, and pepper. Stir well to ensure the rice is evenly distributed.
  • Place the chicken breasts on top of the rice mixture. Season the chicken with additional salt, pepper, and a drizzle of olive oil if desired.
  • Cover the dish with aluminum foil, ensuring it’s sealed tight. Bake in the preheated oven for 25-30 minutes.
  • Remove the foil and carefully spread the tzatziki sauce over the chicken. Return to the oven (uncovered) and bake for an additional 10-15 minutes until the chicken is fully cooked and the rice is tender.
  • Let the dish rest for about 5 minutes. Fluff the rice with a fork and serve hot, garnished with your choice of fresh herbs and additional tzatziki on the side.
