1.5 lbs Chicken Breasts
1 cup Long-Grain Rice
2 cups Chicken Broth
2 tablespoons Olive Oil
1 teaspoon Garlic Powder
1 teaspoon Paprika
Salt and Pepper to taste
1 cup Tzatziki Sauce
Instructions
Preheat your oven to 375°F (190°C).
In a large baking dish, combine the rice, chicken broth, olive oil, garlic powder, paprika, salt, and pepper. Stir well to ensure the rice is evenly distributed.
Place the chicken breasts on top of the rice mixture. Season the chicken with additional salt, pepper, and a drizzle of olive oil if desired.
Cover the dish with aluminum foil, ensuring it’s sealed tight. Bake in the preheated oven for 25-30 minutes.
Remove the foil and carefully spread the tzatziki sauce over the chicken. Return to the oven (uncovered) and bake for an additional 10-15 minutes until the chicken is fully cooked and the rice is tender.
