  • 1 large Onion, finely chopped
  • 4 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 2 medium Tomatoes, chopped
  • 2 tbsp Curry Powder
  • Cilantro, for garnish
  • Salt, to taste
  • Optional: Chili peppers, vegetables, lime wedges, nuts

  • Fry the onions in a large pot until golden and translucent.
  • Add the chopped tomatoes and remaining curry powder, cooking until aromatic.
  • Add the marinated chicken and sauté until browned.
  • Pour in the coconut milk and stir to mix the flavors.
  • Reduce the heat to low, cover, and simmer for 30-40 minutes until the chicken is tender.
