  • 1 Can (15 oz) Kidney beans
  • 1 Can (15 oz) Diced tomatoes
  • 1 Medium onion, diced
  • 1 Red bell pepper, diced
  • 3 Cloves garlic, minced
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • Salt and pepper to taste

  • Instructions

  • Sauté the Vegetables: In a large pot, heat a tablespoon of oil over medium heat. Add diced onions, bell peppers, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  • Brown the Meat: Push the vegetables to the side of the pot and add your ground beef or turkey. Cook until browned, breaking it up with a spoon as it cooks, about 7-10 minutes.
  • Mix in Spices: Once the meat is browned, stir in the chili powder, cumin, salt, and pepper. Cook for another minute to toast the spices and release their flavors.
  • Add Tomatoes and Beans: Pour in the canned tomatoes (with juices) and add both the kidney beans and chicken broth. Stir to combine all ingredients.
  • Simmer: Bring the chili to a boil, then reduce the heat to low. Let it simmer uncovered for at least 20 minutes to allow the flavors to meld together. If you have more time, letting it simmer for an hour will deepen the flavors even more.
  • Taste and Adjust: Before serving, give your chili a taste. Feel free to add more salt, pepper, or even a dash of hot sauce if you prefer additional spice!
