2 cups shelled edamame
1/4 cup tahini
1/4 cup lime juice
2 cloves garlic
2 tablespoons olive oil
Salt to taste
1–2 tablespoons water (optional)
Instructions
Start by bringing a pot of water to a boil. Add the shelled edamame and cook for about 3-5 minutes, until tender. Drain the edamame and rinse under cold water to stop the cooking process.
In a food processor, combine the cooked edamame, tahini, lime juice, garlic, olive oil, and a pinch of salt. Blend until smooth, scraping down the sides as needed.
Once blended to your liking, taste the hummus and adjust the seasoning with additional salt, lime juice, or garlic.
Transfer the Edamame Hummus to a serving bowl. Drizzle with olive oil and garnish with toppings. Serve immediately.
