- 1/2 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 1 cup crumbled Cotija cheese (or feta)
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon garlic powder
- 1 lime, cut into wedges
- Salt, to taste
- Fresh cilantro, chopped (optional, for garnish)
Instructions
- Start by boiling or grilling your corn. If grilling, preheat the grill to medium-high.
- For boiling, fill a large pot with water, bring it to a boil, and then add the corn. Cook for about 5-7 minutes until tender.
- If grilling, turn the corn every few minutes to achieve grill marks, usually about 10-15 minutes.
- In a large bowl, combine the mayonnaise, sour cream, garlic powder, chili powder, and a pinch of salt. Mix well.
- Once the corn is cooked, remove it from the heat and coat each ear of corn with the creamy mixture.
- Sprinkle the corn liberally with Cotija cheese and extra chili powder if desired.
