Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or Greek yogurt
  • 1 cup crumbled Cotija cheese (or feta)
  • 1 teaspoon chili powder (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 lime, cut into wedges
  • Salt, to taste
  • Fresh cilantro, chopped (optional, for garnish)

  • Instructions

  • Start by boiling or grilling your corn. If grilling, preheat the grill to medium-high.
  • For boiling, fill a large pot with water, bring it to a boil, and then add the corn. Cook for about 5-7 minutes until tender.
  • If grilling, turn the corn every few minutes to achieve grill marks, usually about 10-15 minutes.
  • In a large bowl, combine the mayonnaise, sour cream, garlic powder, chili powder, and a pinch of salt. Mix well.
  • Once the corn is cooked, remove it from the heat and coat each ear of corn with the creamy mixture.
  • Sprinkle the corn liberally with Cotija cheese and extra chili powder if desired.
  • Serve the Elote with lime wedges on the side and garnish with chopped cilantro if desired.
