  • Prep the Corn: If you’re using fresh corn, grill the cobs until nicely charred. Allow them to cool, then slice the kernels off the cob.
  • Mix Dry Ingredients: In a large bowl, whisk together flour, baking powder, chili powder, and salt.
  • Combine Wet Ingredients: In another bowl, beat the egg and mix in the lime juice. Stir in the fresh corn kernels and green onions.
  • Combine Mixtures: Pour the wet mixture into the dry mixture, folding in gently until just combined. Gently fold in the crumbled cotija cheese.
  • Heat the Oil: In a large skillet or deep pan, heat about ½ inch of oil over medium heat.
  • Fry the Fritters: Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides.
